Risotto is made from rice and polenta and grits from corn, so they are plant-based. That said, they are also pretty processed. I think about them like whole wheat flour. Certainly not as good for you as the whole grain (rice/corn), but better than animal products.
The challenge with both of them is what people usually put in them; butter, cheese, bacon… etc. Obviously that pushes them right into the not recommended zone.
